Nankoko (Nande koko ni Sensei ga!?) is great as both an ecchi and a romcom. Each volume has a new student protagonist and teacher heroine, with previous volumes' student-teacher couples making cameos here and there. There's an anime adaptation that covers most of the first 4 volumes, highly recommend.

Besides Interspecies Reviewers (if we consider that one ecchi) which is great in its own right, I have fond memories of High School of the Dead. Its over a decade old, but especially at the time it got a lot of shit about being too edgy and adult both for the sexual content/nudity and the violence; much like IR it also had several versions airing for the anime with different levels of censorship or lack thereof. Its worth that of course the Western focus was on the fan service, character designs, nudity etc.. but some in Japan questioned not only the gory zombie violence but the storyline that had students deviating from what they were "supposed" to do and depicting normally legit authority figures like school principals and other officials as either corrupt or ineffectively naive.
