That's a tough question, there are so many good answers.
In terms of specific characters, I really like Malon. I think it's both interesting and very cute that she doesn't even know that her husband is a great hero who saved her family in another timeline, and still just loves him regardless for who he is as a person. She's also completely unaware that she's herself saved Hyrule indirectly multiple times over by continuing Link's heroic lineage, and by starting a whole new heroic lineage in the form of Epona, whose descendants will be the loyal steeds of her descendants for generations and generations to come.
She's one of the most central characters of the whole setting despite not having any powers or being anyone special or important at all. She made an impact just by being a wonderful mother, and I think that's really special.
I like to imagine she and Link had a whole baseball team.
