In Ichirin's case, it might as well be a plot reason to explain why she's still alive after spending around a thousand years locked underground in Old Hell after Byakuren's banishment. Though I suspect it's equally possible that just spending enough time studying/being around youkai comes with a chance to become a youkai yourself.

Plus it seems like youkai and gods are created by and subsist on specifically human superstitions/dreams/fantasies/whatever. Lots of youkai media I've seen also mention the concept of 'spirit body', which is supposedly the reason for their physical sturdiness and spiritual/mental vulnerability. Most of my knowledge of Japanese religion/mythos comes from sexy monstergirl manga, so I'm not really proficient enough to tell, which of the above is the cause and which is (a side) effect, though.
