Assuming 4pc Summit and signature engine in all cases, meaning EX/Chain/Ult get 34% more daze and everything else gets only 6% more. Note: daze boost is factored into the base multipliers here.
Only counting actions that contribute to the daze bar, she does

- it's unfortunate that the assist point bar becomes infinite during the flurry patterns and her some of her multi-hit combos, so it's hard to tell how many are light vs heavy defensive assists. We can tell in some cases what the
last hit of the combo is, but that doesn't really tell us about the rest of it. I'm just going to assume 7 light 7 heavy so I can average the daze calc.

- It's actually 5 full followups but there's also some partials from the parry flurries and one during miasma that missed all but the last hit due to the boss being invincible.

This gives us a baseline to work with. Fufu gets 50 impact from her core that's functionally always up after the first Tiger Cauldron. 3 DAs and 2 DA followups don't benefit from that impact, but everything else does. This means that 1,131.6% + 816.2% = 1,947.8% daze doesn't have the 50 impact and 21,580.02% does.
With Impact D6 and 2pc Shockstar: 146 + 50 = 196 combat impact.

With ER D6 and 2pc Shockstar: 125 + 50 = 175 combat impact.
- We get an extra 129.6 energy over the course of a DA. Assuming this translates into two useful EXs, we get an additional 1,385.02% daze from the EXs themselves and a total of 280 extra might. Let's round that up to 300, meaning we can get 3 extra Tiger Cauldrons, and assume all of those actually do daze, for an additional 1,337.46% daze.

- We only get 43 more energy over a DA with the 2pc ER, so it's not even a full EX, but let's be generous and say it pushes us over a threshold and we can, and that it results in one more Tiger Cauldron over the ER D6.

So even if we assume ideal conditions, where all the extra energy-related daze actually lands when the boss isn't already stunned, we're getting less daze out of it than the Impact D6 and 2pc Shockstar setup. 2pc ER is surprisingly slightly higher, but it also is operating on some favorable assumptions: that you actually get an extra EX (it's not enough energy by itself to guarantee that), and the EX and Tiger Cauldron both contribute meaningfully to a stun. So it's likely worse in practice.
TL;DR, you probably want to always run Impact D6 + 2pc Shockstar on Fufu.
