We chose the worst of Industrial and pre Industrial world, none of the good. Instead of getting depressed, I just focus on my own cooking. But coming to cooking, Youtube recipes are mostly wrong, in ingredients and in technique, there is a homogenization of Indian food, to what westerners expect from us. > धूप मे सुखाना Covered properly, it is fine.
