aren't pixels supposed to be 1x1 pixels? how can these look so pixelated on a high-res screen? also would be awesome if these games would be at 100% scale, so people with a 4K display saw more of the game on screen than those with a 1080p screen.

That would probably break a lot of games, especially those that rely on off screen areas for spawning and resetting sprite positions and stuff like that.
